Bright white foam and very fine perlage. Pale straw colour with greenish tinges. Fruity nose with delicious hints of crusty bread. Full, pleasantly crisp, balanced palate; highly persistent.
PAIRINGS
Spaghetti with seafood, salmon in puff pastry. Perfect as aperitif.
VINIFICATION AND REFINEMENT
The grapes are vinified in temperature-controlled stainless steel; the wine undergoes second fermentation in the bottle the following spring, followed by traditional ageing on the lees for at least 15 months, as established by the regulations.

Vineyards suitable to the production of sparkling wines in Trentino (Valle dei Laghi and the hills around Trento). Areas with a high production of Chardonnay grapes for the classic method, cultivated with the classic Trentino pergola or Guyot method.

DESCRIPTION
Persistent mousse with very fine perlage. Yellow straw colour with hints of green. Complex bouquet with fruity peach notes that blend perfectly with delicate brioche notes. Savoury and pleasantly crisp, very balanced and persistent.
PAIRINGS
Ideal as an aperitif or with fried shrimp or scaloppine alla livornese (a veal cutlet dish).
VINIFICATION AND REFINEMENT
The grapes are hand harvested in boxes and vinified using the technique for white wine with temperature control in stainless steel and old barriques; the following spring, after a period of stabilisation, the second fermentation is carried out in the bottle with a period of over 30 months spent on the lees. At disgorging, only a minimum dosage of “liqueur d’expedition” is added.
GROWING AREA
Vineyards highly suited to the production of sparkling wines in Trentino (hills around Trento, Valley of the Lakes and the Brentonico plateau). The vineyards are cultivated at an altitude ranging from 450 to 700 m a.s.l., cultivated with the classic Trentino pergola or Guyot method.
WEATHER CONDITIONS
Spring 2021 was characterized by cool weather and balanced rainfall and this led to a slightly delayed budding preserving the vine from cold returns. The season then continued with high temperatures and little precipitation favoring flowering and ensuring an excellent fruit setting of the berries. The harvest period was positively marked by important thermal excuriosis, with hot days by day and cool at night, which favored a perfect maturation of the grapes and the maintenance of an excellent level of acidity for the batches destined for the sparkling wine bases.

DESCRIPTION
Pale pink in colour with copper hues, creamy white foam, fine, persistent perlage. Complex, fruity nose reminiscent of ripe cherry, blackcurrant and red apple. Rich, well-balanced palate, with highly persistent aftertaste.
PAIRINGS
Greats as aperitif, still is a perfect match with main courses of white meats, shellfish and grilled fish
VINIFICATION AND REFINEMENT
The grapes are vinified by slowly crushing only whole Chardonnay berries to separate the different qualities of must, which are then inoculated with selected yeasts and fermented at controlled temperatures in stainless steel tanks. Pinot Noir is vinified by using the “submerged cap” maceration system, which consists of leaving the must in contact with the skins until the first signs of fermentation; the must is then separated and fermented in stainless steel with temperature control. This enables a pale, delicate pink colour to be extracted from the skins, which is a distinctive feature of Trento DOC Rosato Cavit. The wine undergoes second fermentation in the bottle during the following spring, followed by traditional ageing on the lees for at least 24 months. During disgorging a minimum dosage of liqueur d’expedition is used.

DESCRIPTION
Delicate pink colour with darker pink hints and a fine and persistent perlage. The nose has a delicate hints of damson and red apple culminating in pleasingly sweet almondy notes. The wine proves itself to be very smooth and persistent to the palate.
PAIRINGS
Aperitif and table wine, with soups and main courses lamb and white meats.
VINIFICATION AND REFINEMENT
The Chardonnay, harvested by hand in boxes, is gently pressed by separating the different fractions of the must that ferment in stainless steel. Pinot Noir is obtained with the “submerged cap " system by separating the must from contact with the skins at the first signs of beginning fermentation that continues in stainless steel at a controlled temperature. In this way we are able to obtain a soft pink color that characterizes our Trentodoc rosato. In the following spring, the fermentation takes place with aging on the lees for at least 36 months before disgorgement.
GROWING AREA
Cuvee of the best Pinot Noir and Chardonnas grown between 450 and 600 meters above sea level. The vineyards are located on basaltic soils of volcanic origin in the Brentonico Plateau area and on soils of fluvio – glacial origin in Cembra Valley.
WEATHER CONDITIONS
The 2019 vintage was characterized by early budding due to the high temperatures of March and April which was followed by late flowering due to the low temperatures of May. The flowering took place in a dry and ventilated climate and this led to an excellent fruit setting of the bunches. The summer period recorded high temperatures compared to the average with long sunny periods and no precipitation. The harvest began at the beginning of September and continued until the end of the same month. The quality of the grapes was of the highest level as they were healthy, well ripe and with important acidity.

Fine, continuous perlage. Straw yellow in colour with golden reflections. Complex, intense nose. Fruity peach notes merge with nutty hints such as hazelnut. Mouth-filling, very balanced and persistent palate. Extremely pleasant almondy finish.
PAIRINGS
Risotto with smoked trout, shellfish, white fish baked with vegetables, veal and lamb.

WEATHER CONDITIONS
The end of winter and spring 2020 were marked by mild temperatures and favorable for early budding followed by early and rapid flowering thanks to the warm and dry climate. The summer was characterized by abundant rains, but well distributed and this guaranteed the vines an optimal vegetative development. The summer climate, typical of the Dolomitic-Alpine areas, has guaranteed the presence of the temperature changes necessary to preserve the acidic component of the grapes and therefore the freshness of the aromas and taste in the wines.

DESCRIPTION
Fine and persistent perlage. Straw yellow in colour with shiny reflections. Fresh nose reminiscent of white-fleshed fruits such as apple and white peach, combined with hints of citrus such as bergamot. Mouth-filling, with excellent body, balance and intensity, it ends on a rich, pleasantly almondy, finish.
PAIRINGS
All fish-based dishes, oysters and raw shellfish, but also with traditional cold cuts.
VINIFICATION AND REFINEMENT
The perfectly ripened grapes were harvested in crates and after being gently crushed, underwent fermentation in stainless steel. The second fermentation took place in April, after the base wine had been left to mature for a while. Disgorgement took place 44 months after tirage without any liqueur d´expedition being added.
GROWING AREA
The grapes selected for the production of this wine are cultivated in different regions: from the slopes of the coneshaped alluvial fans in the Dolomite mountains, where the chalky soil is rich in texture, to the Valle dei Laghi Valley, with its well-drained marlstone, and the Valle di Cembra valley, whose steep slopes are formed from gravelly glacial-fluvial deposits. The vineyards are located at altitudes between 450 and 600 metres above sea level, where the significant temperature variations between day and night make it possible to obtain grapes with a superior acid content.

Persistent, creamy foam. Bright yellow in colour with greenish highlights. On the nose presents intense citrus notes, along with hints of marzipan. The palate is extremely pleasant, harmonious and very persistent.

All starters and main course fish and white meat dishes.
VINIFICATION AND REFINEMENT
The blend is composed of the best selections of the 2018, 2019 and 2020 vintages, in terms of their expressiveness. Each vintage is vinified and kept for about a year in wood after which the maturing process continues for a year in stainless steel, and then for another year in concrete vats. This precise sequence of different materials in which the wine is matured guarantees perfect development of the wine´s organoleptic profile. During tirage, the base wine is bottled along with the yeasts which, after the second fermentation stage, will remain in contact with the wine for a maturation period of over 30 months.

Creamy foam on top of a fine, persistent perlage. Straw yellow with golden reflections. Intense nose, with hints of red apple and crusty bread prevailing, complemented by spicy notes, such as cardamom. In the glass it appears expressive, complex and elegant. Minerally and very wellbalanced palate.
PAIRINGS
Grilled fish, white meats, cheeses and filled pasta.
VINIFICATION AND REFINEMENT
Manual harvesting in crates preceded traditional soft pressing of the perfectly ripened grapes, with separation of selected parts of the grape must, which underwent fermentation at controlled temperatures in stainless steel and barriques. The second fermentation took place in April, after the base wine had been left to mature for a while. The first disgorgement took place 70 months after tirage.

The most suitable highest hills for the cultivation of grapes for sparkling wine in Trentino (the hills around Trento, the Brentonico Plateau and Valle dei Laghi). Grapes grown on loose, generally shallow, glacial and volcanic soils at altitudes of 500 to 700 meters a.s.l. The vineyards are directly monitored and checked by Cavit agronomists.
WEATHER CONDITIONS
After a cold month of January with no precipitation, a long period followed with mild temperatures until March that anticipated the vegetative recovery. Good the May-July quarter with widespread rainfall at the end of June. The harvest began at the beginning of September with healthy and ripe grapes destined to give a product of excellent quality.
